post-Pitchfork updates

last weekend I volunteered at Pitchfork Music Festival, with a free day sandwiched in between, and with that beautiful chaos, many a home task were neglected or put off for my next day off (which isn't until Saturday). but as they say 'a watched pot will never boil', so it seems a fussed over garden will never grow. I think the plants needed a break from me, and they rewarded me with sprouting zeppelin delicata squashes, carrots, spinach, swiss chard, and some reluctant beets (c'mon guys, you can do it!), and multiple clusters of plump cherry tomatoes (still green) and cucumbers (still prickly and awkwardly knobby). I also managed two more full frames of honey, as well as the fragrant honeycomb that comes with it -- nearly 3.5 pounds of the sweet stuff! the queen continues to be elusive, the workers continue to give it their all, and I continue to reap the benefits in my coffee and on my toast every morning.



some simple meals that have kept me satisfied these last few weeks follow. I break from my only local or from the garden rule for avocados (and, you'll see, ramen noodles). I just can't do without them, at least once in a while.

toasted bread (I use sourdough)

spread half of an avocado while still warm. drizzle honey over the top. go crazy with a dash of coarse salt, if you're feeling adventurous.

same as above, but with different ingredients. add or take away things you like or don't like. own that avocado toast, personally.

whole beefsteak tomato, cut into chunks
garlic clove, crushed and chopped

beet greens, chopped

cook the pasta with salt, sautee the rest separately. throw the whole thing into a bowl, sprinkle some coarse salt and freshly ground pepper on top. yum.

ramen with basil and mint meatballs
ramen noodles (the cheap packages, it's a staple in our pantry)

bread crumbs

make the meatballs by combining the ground beef, bread crumbs (as many as you have, or need, to help the meatballs stick together), egg, half the basil and garlic, all of the mint, and some salt and pepper. sautee these with the rest of the garlic, half of the tomato, and the spring onion. once their nearly done, throw the ramen into some boiling water. you don't need much, maybe a cup or less (makes for a thicker broth). add everything you've sauteed to the ramen and liquid, and then add everything that's left (a little bit of uncooked tomato, and fresh basil). sprinkle with a generous amount of coarse salt, and some pepper. add a little bit of soy sauce, if you have some.

usually I try to make a little extra of each meal, so I have a lunch ready in the morning to take to work. it's tastier, and cheaper, and healthier than buying some crap at the 7-11 down the street (which I am, occasionally, want to do).

tonight I'm making catfish and potatoes, simple simple simple. I'm washing it down, however, with my homemade moonshine (strawberry lemonade), so that makes it all a bit more of a celebratory occasion.
